I’ve been soaking up the last few weeks of summer in the kitchen and making ALL the corn things (it’s the Iowa girl in me!) plus grilling, but I’ve also been gravitating towards some cooler-weather meals. I think fall is my favorite season to cook in and I’m looking forward to more cozy meals.
Here’s a roundup of recipes I’ve made recently! Enjoy!
1. Grilled Peach and Burrata Salad with Prosciutto

This was AMAZING. Fresh, healthy (…ish), decadent because of the burrata. I’m only docking points because grilling the peaches didn’t seem necessary to me. I made it again the next day with fresh un-grilled peaches and it was just as good, if not better in my opinion! I skipped making any kind of homemade balsamic dressing and just used the Trader Joe’s balsamic glaze – would recommend it! With some fresh pepper on top – YUM. This would be a showstopper first course/appetizer/side dish at a dinner party.
2. Garlic Butter Creamed Corn Chicken – Half-Baked Harvest
9/10
I made this for my parents and we all LOVED it! Fresh Iowa corn of course makes this better – but you can’t go wrong with garlic, butter, bacon, and chicken! This one has so much flavor and is better than it looks – promise! Don’t skimp on the fresh herbs. Halve/butterfly your chicken breasts if they’re big!
3. 30 Minute Korean Beef and Avocado Rice Rolls – Half-Baked Harvest
8/10
This was a super quick dinner and a fun flavor twist on regular burritos. Do not skip the mango, red pepper, or fresh cilantro – these make it taste so fresh! I made it with my favorite raw tortillas from Costco (you’ll never use regular tortillas again) – but just made burrito bowls with the leftovers and it was just as good (especially with a drizzle of spicy mayo). Will be making again!
4. One Pot Buffalo Chicken “Helper” – Half-Baked Harvest
7/10
This might not be the most appetizing food picture I’ve ever taken, but this dish is a solid weeknight comfort meal. It comes together super quick and is made in one pot so less dishes (you don’t even have to boil the pasta separately – it cooks in the pan!). If you’re a fan of buffalo, this is basically buffalo chicken in pasta form. (Also: peep the news Always Pan 2.0 I’ve been testing out!)
Note: The pasta took a little longer to cook for me than what was noted in the recipe, and I baked it at 350 at the end (a specific temp wasn’t given!).
5. The Best Chocolate Chip Cookie Recipe Ever – Joy Food Sunshine
10/10
I know this isn’t a meal, but I could eat enough of these cookies to qualify as one. They really are the best! Tip: This recipe makes a LOT so unless you’re cooking for a crowd or have better self-restraint than I do, I would recommend balling and freezing half the dough. Then, you can pull out and make a few fresh cookies at a time in the future – it’s the best!
