Recipe Roundup – What I Made This Week 2.16.23

Here’s a roundup of recipes I made this week! Enjoy!

This last week I had the house to myself over the weekend which meant slow, lazy mornings that called for baking! And, a small dinner party with some girlfriends where I made the jalapeno popper pizza from my last roundup and the steak bites below. It was so much fun!

  1. Maple Glazed Doughnuts – Half-Baked Harvest

    9/10
    These. Were SO good. The hardest part was not eating them all! Tip: I put the batter in a large plastic bag and clipped the corner to pipe it into my doughnut pan with less mess. The glaze on these guys…do NOT skip. And take a spoon to it at the end if you have any leftover. Also if you don’t have a donut pan – you need. I swear by these.

  2. Steak Bite Appetizer

    10/10
    This is a favorite to make as an appetizer when hosting – they are always a hit! Boursin cheese + perfectly cooked steak = perfection. This is kind of a no-recipe recipe…it’s literally just steak cut into strips and placed on top of toasted baguettes with Bourisn cheese :). Sometimes simple is better!

  3. Blueberry Swirl Coffee Cake Muffins – Half-Baked Harvest

    9/10
    I was craving blueberry muffins and had everything on hand to make these on a lazy Sunday morning. I didn’t have cupcake lines so I used cut-up squares of parchment paper and love the way they turned out – I actually think I will do this for all muffins/cupcakes in the future! It gives them that bakery-style look and is easy to eat from with all the extra crumbles that come on top. The jam swirled into the batter is brilliant. I froze half so I wouldn’t eat them all at once!

  4. Halal Guys Copycat Recipe (Chicken and Rice) – Serious Eats

    9/10
    If you’ve been to a big city, you’ve probably seen or had the Halal Guys food carts, famous for their chicken and rice platters with a delicious white sauce and super spicy red sauce. I get a craving for this dish often, and this recipe doesn’t disappoint! Sometimes I make my own homemade sauces, sometimes I’ll skip and use Trader Joe’s jarred harissa (if you like spicy). My best tip for this recipe is to use twice the amount of chicken you think you should use (above: 2 lbs chicken thighs) and once they’re done cooking, use a wooden spatula to aggressively chop up in the pan to get the smaller bites and more char/seasoning on every piece. I like to serve it with shredded lettuce and tomatoes, and it makes great leftovers!

  5. Spicy Ramen with Chicken Katsu – Half-Baked Harvest

    6/10
    I’m so sad I didn’t love this one! I don’t know if it’s because I’m not the biggest ramen fan or bitter that this took me way longer than the “30” minutes it was supposed to, or that I couldn’t find white miso paste at the store – but the juice just wasn’t worth the squeeze for me on this one. I didn’t love putting the delicious crispy chicken in the broth (to me it just became soggy!) – but did love the leftover crispy chicken on its own in the air fryer the next day. If you’re a ramen lover, you’d probably love this and it would come together much quicker for you. It just wasn’t for me!
