Recipe Roundup – What I Made This Week 6.7.23

It’s been a minute since my last recipe round-up, but let me tell you…I have been BUSY in the kitchen! If you follow me on social, you’ll know a lot of that has been pizza-related. I am absolutely obsessed with my new Ooni Koda 12 and plan to do a full review complete with my favorite recipes so far, so for this round-up, I’m going to omit the pizza-related recipes – but know they’re coming.

Here’s a roundup of recipes I’ve made recently! Enjoy!

  1. Warm Whipped Ricotta Dip – Evergreen Kitchen

    8/10
    We ordered a whipped ricotta appetizer at a dinner last weekend and I have been dreaming of it ever since, so I set out to find a recipe to recreate it at home. This one did the trick! My only suggestion: bake the dip for a little bit and serve it warm. Extra decedent that way! We served it with toasted sourdough. This will for sure be my new go-to hosting appetizer.

     

  2. Ina Garten’s Summer Pasta – FOOD NETWORK

    10/10
    If you try one recipe from this list – make it this one!!! This pasta was 10/10 incredible, so easy to make, and tasted like something I would come to a restaurant just to order. You do need to start this recipe ahead of time – the sauce is no bake, but you have to let the tomatoes marinate at room temp for at least 4 hours – but outside of that, it comes together super quick. The recipe as written feeds a crowd, so if you’re cooking for just yourself or one other person, definitely halve the recipe (and the garlic!). I also will admit I used shaker parm vs. grating fresh. Happy to report that it still came out amazing. Pairs well with a crisp sauvy b.

  3. Homemade English Muffins – PREPPY KITCHEN

    Here’s my beef with this recipe. I woke up and was craving English muffins and thought I would just “whip some up real fast”. Well…joke was on me for not reading the recipe all the way through before starting and missing the part about letting the dough rise for an hour, then another hour, then the time it would take to actually bake them. These babies took HOURS – not something you want to do hangry. However – once they were done, I couldn’t argue that homemade is better than storebought. But if you take these on, make sure you have some time carved out to tackle them. Definitely a labor of love!

  4. Pork + Cheese Pupusas – Tasty

    8/10
    I. Love. Pupusas. They are a Salvadorian meat/cheese-filled corn dough pancake that before making on my own, I had only had from our local farmers market. These are also a labor of love, but if you love pupusas, they are worth the effort. I’ve used this Tasty recipe several times throughout the years–the video recipe is actually really sweet (a grandma teaching her grandson) and helpful to watch/see how they are put together. Another labor of love, but if you love pupusas, you’ll appreciate this recipe! The pickled cabbage slaw that goes with it is a must.

  5. Pulled Chicken Sandwiches

    7/10
    This isn’t really as much of an official recipe as it is something I just threw together. Cook chicken in the slow cooker/Instant Pot and shred (using your Kitchen Aid if you have one), then use the shredded chicken throughout the week for quesadillas, nachos, etc. In the picture above, I mixed with barbeque sauce and topped with pickles (Clausen pickles from the refrigerated section are where it’s at) to make pulled chicken sliders. It gets points for being simple!

The best DIY fall decor ✨The key here is picking your hydrangea stems just as they’re starting to turn color, rinsing them in soapy water to get rid of bugs, then using the evaporation method to dry flowers so the water evaporates and doesn’t mold the stems - but the stems dry happy and keep the flowers the color you picked them at.
