Over the years, I’ve been known to make my mom’s famous bruschetta, but I’ve almost made it too many times that I was in the mood for something a little different to bring to a recent girls night. Enter this strawberry goat cheese bruschetta recipe!
It was an instant hit – everyone loved it! And it was so quick to make. Win-win!
I saw a similar recipe on TikTok for strawberry bruschetta with ricotta, but I only had goat cheese on hand—and after trying it, I don’t think I’ll make it any other way! Many strawberry ricotta bruschetta recipes also call for thyme. I tested with both thyme and basil when making mine and preferred basil.
This recipe couldn’t be easier and is perfect for hosting or bringing over to friends!
Bonus: This recipe’s red, white, and green colors make it a great appetizer for the holidays! I also plan to make it again for a girl’s Galentine’s Day party.
How to Make Strawberry Bruschetta with Goat Cheese
Strawberry Bruschetta with Goat Cheese Recipe
Ingredients
- 1 cup Goat cheese, room temprature for easy spreading
- 1 pound Strawberries, washed and diced
- 3 tbsp Balsamic glaze
- Fresh basil leaves
- 1 Loaf italian bread
- Olive oil for topping bread
Instructions
- Cut bread into slices, brush with olive oil, and broil until light brown.
- Wash and dice strawberries. Combine with 2-3 tbsp balsamic glaze and julienned (diced) basil. Add salt and pepper to taste.
- Spread goat cheese on toasted bread. Top with strawberry mixture, a drizzle of balsamic glaze, and garnish with additional basil.
A few tips for making strawberry bruschetta
- Room-temperature goat cheese will be easier to spread
- You could make this using regular balsamic vinegar (or reducing yourself!), but I find it easier to just use ready-made balsamic vinegar glaze. I get mine from Trader Joe’s.
- To make these extra pretty, top with fresh basil – outside of what is already used in the mixture – for a pop of color. I wish I would have done that for these pictures!
